Why I Love This Easy Pasta Dish
Some nights, you just need something cozy, quick, and satisfying. For me, that often means pasta—but with a nutrient-dense twist. Instead of plain noodles and store-bought sauce, I love making this easy plant-based pasta with wholegrain pasta, loads of veggies, and white beans for protein.
And here’s the secret: after the sauce is done simmering, I stir in a little Daily Greens powder for an extra detoxifying, energizing boost. The kids never notice—and it’s such a simple way to sneak in more superfoods.
🌱 Easy Plant-Based Pasta Recipe
Ingredients (serves 2–3):

250 g buckwheat or brown rice pasta

1 onion, diced
-
150 g mushrooms, sliced

1 zucchini, chopped
-
150 g white beans (cooked or canned, rinsed)

2 handfuls fresh spinach
-
2 fresh tomatoes, chopped
-
1 jar (400 g) tomato sauce
-
1 tbsp Italian herb blend
-
Optional: 2 tsp SuperPlants Daily Greens

Drizzle of tahini (for topping)

Salt & pepper to taste
Instructions:

Cook pasta according to package directions. Drain and set aside.

In a large pan, sauté onion and mushrooms until soft.

Add zucchini, fresh tomato, and spinach, and cook until tender.

Stir in white beans, jarred tomato sauce, and Italian herbs. Simmer for 10 minutes.

Remove from heat and (optional) stir in Daily Greens powder.

Serve over pasta and top with tahini drizzle.
